Easy Iced Cookies

Homemade cookies are always popular at parties. They make great bridal shower favors too. Simply pop the cookies into cellophane bags. Then cinch the bags closed with twist ties and pretty ribbons.

Cookie Ingredients

2 cups (8 ounces) all-purpose flour
Quarter teaspoon of baking powder
Pinch of salt
Half cup (4 ounces) of sugar
Half cup (4 ounces) margarine, room temperature
Half an egg

You will also need

2 largish mixing bowls
Small mixing bowl
Cookie cutter
Baking sheet
Margarine to grease the baking sheet

Icing ingredients

1 and a half cups (6 ounces) confectioners’ sugar (powdered sugar or icing sugar)
About 1-1 and a half tablespoons of warm water
A drop or 2 of food coloring (optional)

How to make the cookies

1. Preheat the oven to 325 degrees (170 degrees centigrade).

2. Grease a baking sheet.

3. Sift the flour, baking powder and salt into a largish mixing bowl.

4. In another largish bowl beat (cream) together the margarine and the sugar until pale and light.

5. In a small bowl, beat the egg.

6. Mixing well after each addition add half of the beaten egg a little at a time to the creamed margarine and sugar.

7. Now, using a wooden spoon, stir the flour into the margarine, sugar and egg mixture. Mix until all the ingredients are well combined. (The mixture should be fairly stiff.)

8. Roll out the cookie mixture thinly.

9. Using a cookie cutter, cut into shapes – hearts, flowers, bells and shoes are fun.

10. Carefully transfer the cookie shapes to the baking sheet.

11. Bake on the center rack of the oven for 15-20 minutes or until the cookies are a pale golden color.

12. After removing from the oven leave the cookies to set a little, then carefully lift each one on to a wire cooling rack.

Icing instructions

1. Sift the confectioners’ sugar into a bowl.

2. Stirring well after each addition, add the warm water a little at a time until the icing is smooth and fairly thick.
Icing tip: If you think the icing is too stiff just add a little more warm water. If too runny simply add a little more confectioners sugar.

3. If preferred, now add a drop or 2 of food coloring and stir well.

4. Using a teaspoon evenly coat the surface of each cookie.

Simply scrumptious!

Cook’s tip

‘To cream’ means to beat together the margarine and the sugar until the mixture is pale and light – like whipped cream.
