Simple Cherry Muffins Shower Recipe
Ingredients
2 cups (8 ounces) self-rising flour
1 cup (8 fl oz) milk
1 egg
4 ounces mascarpone cheese
Half cup (4 ounces) demerara or light brown sugar
A little extra sugar for sprinkling
1 can pitted cherries (you'll need about 12 ounces)
You will also need
A 12 cup muffin pan
Butter to grease the pan
2 mixing bowls
How to make
1. Preheat the oven to 350 degrees (180 degrees centigrade).
2. Grease a muffin tin.
3. Drain the cherries, then cut each cherry in two. Set aside.
4. Put the mascarpone cheese and the sugar into a large mixing bowl and beat until creamy - it'll still be grainy.
5. Add the egg, and beat until well mixed.
6. Sift the flour into another bowl.
7. Adding a little at a time, alternately fold the flour, the milk and the cherries into the mascarpone and sugar mixture (mix just until the ingredients have combined - don't over mix).
8. Divide the mixture between the muffin tin cups.
9. Sprinkle with sugar.
10. Bake for 30-40 minutes, or until cooked.
Cook's tip
If you're not familiar with the term 'fold', it simply means, with a metal spoon to lightly cut through and lift the ingredients over each other. Its just a lighter way of mixing ingredients together.
