Bridal Shower Cupcakes
These little iced cakes are perfect for bridal showers. They're also really easy to make; and they taste good too.
Cake ingredients
1 cup (4 ounces) self-rising flour
Half cup (4 ounces) superfine sugar (caster sugar)
1 stick (half cup or 4 ounces) soft margarine or butter (room temperature)
2 eggs
1 teaspoon baking powder
2 drops of vanilla extract
Icing ingredients
1and a half cups (6 ounces) confectioners' sugar (powdered sugar or icing sugar)
About 1-1 and a half tablespoons of warm water
A drop or so of food coloring (optional)
You will also need
A cupcake or muffin pan
12 paper baking cups
Cake decorations (optional)
Cooking instructions
1. Preheat the oven to 350 degrees (180 degrees centigrade).
2. Sit the paper baking cups in the muffin tin.
3. Put the flour, the baking powder, the superfine sugar, the butter, the eggs and the vanilla extract into a large mixing bowl.
4. Whisk until all the ingredients are well combined - an electric hand mixer makes this job simple.
5. Using a spoon, divide the mixture equally between the paper liners.
6. Bake on the center rack of the oven for 15-20 minutes, or until the cakes are nicely risen and a pale golden color.
7. Then remove the cakes from the tin, and put them on a wire cooling rack. Leave to cool.
Icing instructions
1. Sift the confectioners' sugar into a bowl.
2. Stirring well after each addition, add a little warm water at a time; mix until the icing is smooth and fairly thick.
Icing tip: If you think the icing is too runny simply add a little more confectioners sugar. If you think it's too stiff just add a little more warm water.
3. Then add a drop or two of food coloring, if preferred, and stir well.
4. Ice the top of each cake in turn; adorning with cake decorations as you go.
